adai is a very popular South Indian breakfast recipe made with rice, lentils, and spices. It is a protein packed breakfast dish which can be served with coconut chutney or simply with jaggery.

ingredients
- samba godhumai rava or cracked wheat – 1 and 1/4 cup
- bengal gram or kadala paruppu – 1/4 cup
- toor dal – 1/4 cup
- moong dal – 1/4 cup
- urad dal – 1/4 cup
- cumin seeds – 1 teaspoon
- dry red chili – 3 – 4
- ginger – 1-inch piece
- shallots – 3 – 4
- asafoetida powder or hing – a pinch
- curry leaves – few, torn into pieces
- salt – to taste
- carrot – 1 small, grated
- curry leaves – few, torn
Procedure
1.Wash and soak all the dal together for 3 – 4 hours. After 4 hours, drain the excess water from the dal and keep aside. Do not throw away the water, it can be used while grinding.
2. Add dry red chili, shallots, cumin seeds, to a mixer jar. Give one pulse. Add the soaked and drained dal to the mixer jar and grind it to a coarse paste. Add a little water if necessary.
4. Transfer the ground paste to a bowl. Add the soaked samba ravai to the ground batter and mix well. Add the required amount of salt. Add torn curry leaves, mix well. Add a little water if necessary and make a batter which is slightly thicker than the dosa batter. Keep the adai batter aside.
5. Heat a tawa and grease it with oil. When the tawa is hot enough, add a ladle full of batter into the hot tawa and spread evenly. Drizzle oil around the edges and at the center. Cook in medium flame until the bottom side becomes golden brown in color. Flip the adai to the other side and cook on this side too until it becomes golden brown.
6. Serve samba godhumai adai with coconut chutney, or with sugar.
