Dal – Maharashtrian Varan

Learn how to make basic Varan / Dal and also other types of dal from our chef Archana on Ruchkar Mejwani Basic Cooking.

Ingredients:

For Basic Dal / Varan
250 gms Tur Dal
Water
1/2 tsp Hing
1/2 tsp Turmeric Powder
Sugar
Salt to taste

For Ambat Varan
2-3 tsp Oil
1 tsp Cumin Seeds
1 tsp Mustard Seeds
10-12 Curry Leaves
2-3 Green Chillies
1 Tomato chopped
Coriander leaves
Tur Dal, cooked
3-4 Kokam
1/2 tsp Sugar
Salt to taste
Water

For Spicy Varan
2 tbsp Oil
1 tsp Cumin Seeds
1 tsp Mustard Seeds
1 tbsp Ginger Garlic Crush
10-12 Curry Leaves
1 Onion, chopped
1 tbsp Jaggery
Coriander Leaves
1 tbsp Grated Coconut
1 tbsp Mix Masala
Salt to taste
Water
Tur Dal, cooked

Method:

To make basic varan:
– In a pressure cooker add tur dal & water.
– Then add hing & turmeric powder. Let the dal cook on 3-4 whistles.
– Once the dal is cooked add little water and churn well.
– Add sugar and again mix well.
– Let the dal boil in slow flame.
– Basic varan is ready. Serve it with a dollop of ghee.

To make ambat varan:
– Pressure cook the tur dal and keep it aside.
– In a pan heat some oil.
– Add cumin seeds, mustard seeds, curry leaves, green chillies, coriander leaves & chopped tomato. Saute everything well.
– Add pressure cooked tur dal, kokam, sugar & salt. Mix well.
– Add water and let the dal boil for some time.
– Garnish with coriander leaves and serve.

To make spicy varan:
– Pressure cook the tur dal and keep it aside.
– In a pan heat some oil.
– Add mustard seeds, cumin seeds, ginger garlic crush, curry leaves, chopped onion, mix masala, jaggery, coriander leaves, grated coconut & salt. Saute everything well.
– Add little water and let the onions cook.
– Add pressure cooked tur dal and mix well.
– Add water and let the dal boil for some time.
– Garnish with coriander leaves and serve.
